Recipe: Orange & Ginger Flapjacks

On Saturday some of my friends came for an afternoon visit, so Laura and I got baking. We made scones, and chocolate brownies, and fairy cakes, and we also made some orange and ginger flapjacks. This recipe is adapted from my normal flapjack recipe and very loosely based on some orange and ginger flapjacks I got in a Graze box one time. I've found that with these, the pan you select makes a big difference to the kind of flapjack you get - a larger pan will mean thinner, crunchier flapjacks, and a smaller one with mean thicker, softer, cakier flapjacks. So choose wisely.

Orange & Ginger Flapjacks

4oz caster sugar
4oz margarine or butter
2tbsp golden syrup
zest of 1/2 large orange*
1/2 tsp ground ginger
8oz porridge oats

Melt the sugar, margarine and syrup in a large saucepan. Mix in the orange zest, then the ginger and the oats. Press into a lined pan. Bake for about 20 minutes (until golden) at 170C. Leave in pan to cool, marking into slices while still warm.

*perfect excuse to make double quantities, or make one batch, eat them all up, then make another
